Descriptions : Turkish Bu çalışmada, Dixired çeşidi şeftalilerin depolama suresine bağlı mekanik özelliklerindeki (kabuk yırtılma kuvveti, elastisite modülü, deformasyon enerjisi ve deformasyon) değişim deneysel olarak belirlenmiştir. Ayrıca, mekanik özellikler ile zedelenme hassasiyeti arasındaki ilişki de araştırılmıştır. Bu amaçla, pendulum çarpma test düzeneği ile 4 farklı enerji seviyesinde çarpma denemeleri yapılmıştır. Zedelenme hacimleri, çarpma uygulaması sonrası zedelenmiş şeftali meyveleri üzerinde ölçülmüştür, ölçümler sonucunda, depolama süresindeki artış ile kabuk yırtılma kuvveti, elastisite modülü ve deformasyon enerjisi değerlerinin azaldığı belirlenmiştir. Bu nedenle, Dixired şeftali çeşidinin 0°C ve %90 nispi nem düzeyinde depolanması durumunda 14. günün kritik gün olduğu ve bundan sonraki günlerde şeftalilerin çarpma zedelenmelerine karşı daha duyarlı hale geldiği bulunmuştur. Mekanik özellikler ile zedelenme hacmi arasındaki ilişkiler incelendiğinde, en uygun ilişkinin üssel olduğu ve mekanik özelliklere ilişkin matematiksel modeller arasında 0.744’luk belirtme katsayısı ve 0.426’lık standart hata ile zedelenme hacmini en iyi tahmin edebilen mekanik özelliğin kabuk yırtılma kuvveti olduğu belirlenmiştir.
English In this study, variation in the mechanical properties (bio-rupture force, modulus of elasticity, and failure energy and deformation) depending on duration of storage of Dixired peaches was experimentally investigated. Furthermore, relationship between the mechanical properties and bruise susceptibility was examined. Therefore, Impact treatments were applied to the peaches by pendulum impactor test device at four energy levels. After impact treatments, bruise volume was measured in the bruised peaches. It was determined that bio-rupture force, modulus of elasticity and failure energy decreased wit the increase of duration of storage. When Dixired peaches were stored at 0°C and 90% relative humidity, 14 days in storage was a critical day for peaches, and it was found that peaches were very susceptible against impact damage after 14 days. When investigated relationship between mechanical properties and bruise susceptibility, the best suitable mathematical model was found to be exponential. In addition, it was determined that bio-rupture force was the best predictor with coefficient of determination of 0.744 and standard error of estimates of 0.426 between the mathematical models.
German In dieser Studie wurde die Schwankungen der mechanischen Eigenschaften (Bio-Bruch-Kraft, Modulo Elastizität, und Scheitern Energie und Verformung) je nach Lagerdauer Dixired Pfirsiche experimentell untersucht. Darüber hinaus wurde die Beziehung zwischen der mechanischen Eigenschaften und der Bluterguss Anfälligkeit untersucht. Daher wurden Auswirkungen Behandlungen auf die Pfirsiche Pendel einwirkende Testgerät auf vier Energie-Ebenen angewendet. Nach Auswirkungen Behandlungen wurde Bluterguss Band in die geprellte Pfirsiche gemessen. Es wurde festgestellt, dass Bio-Bruch Kraft, Elastizitätsmodul Elastizität und Misserfolg Energie Wit die Erhöhung der Dauer der Lagerung abgenommen.
