Descriptions : Turkish Bu araştırmada, ev tipi bir mikrodalga fırında Aflatoksinli kırmızı pul biberin ozonlu suyla yıkamayı temsilen 5 ve 10 dakika sürelerde yıkandıktan sonra mikrodalga ile ürünün kurutulmasında kullanılan mikrodalga uygulama süresinin (mikrodalga jeneratörlerinin açık kalma süresi/mikrodalga jeneratörlerinin kapalı kalma süresi) enerji tüketimi, kuruma süresi, ulaşılan son nem ve ürün renk kalitesi üzerine etkileri araştırılmıştır. Kullanılan mikrodalga uygulama süreleri (açık, sn/kapalı, sn) sırasıyla sürekli, 30/30, 30/45, 30/60, 45/30, 45/45, 45/60 olacak şekilde ayarlanmıştır. Denemeler sonucunda mikrodalga uygulama süresi artıkça kurutma etkinliği artmış, fakat mikrodalga ünitenin çalışmadığı sürelerin az ya da çok olduğu 30/30, 45/30, 45/60 olan denemelerde enerji tüketimi ve kuruma sürelerinin artığı gözlemlenmiştir. Denemeler sonucunda 45/45 mikrodalga uygulamasında enerji tüketimi ve kuruma süreleri diğer kombinasyonlara göre daha iyi sonuçlar elde edilmiştir.
English In this thesis, a domestic microwave oven was used to dry red pepper flakes after washing it in 5-10 minutes with normal water corresponding of ozonated water. The main objective of this study was to determine the effects of the pulsing ratio (on time s/ off time s) on dryer time, energy consumption, and dried product quality in terms of color. Microwaves were applied as pulsed mode by using a special control device to control the on time and off time of microwave generators. Applied microwave pulsing ratio ( on time s, off time s) were continuous, 30/30, 30/45, 30/60, 45/30, 45/45, 45/60 respectively. The result shows that 45/45 application is best from all which consume less energy for to evaporate 1 kg water from the food.
German In dieser Arbeit wurde eine inländische Mikrowelle Paprika Flocken trocknen nach dem Waschen Sie es in 5-10 Minuten mit der normalen Wasser entsprechend Ozonated Wasser verwendet. Das Hauptziel dieser Studie standen zur Bestimmung der Wirkung der pulsierenden Ratio (auf Zeit s / off Zeit s) Trockner Zeit, Energieverbrauch und getrocknete Produktqualität in Bezug auf Farbe. Mikrowellen wurden als Gepulster Modus mithilfe ein spezielles Steuergerät zur Steuerung bei Zeit und Ruhezeiten der Mikrowelle Generatoren angewendet. Angewandte Mikrowelle pulsierenden Verhältnis (auf Zeit s, off Zeit s) wurden kontinuierlich, 30/30, 30/45, 30/60, 45/30, 45/45, 45/60 bzw.. Das Ergebnis zeigt, dass 45/45 Anwendung am besten von allen, die weniger Energie verbrauchen ist um 1 kg Wasser aus der Nahrung zu verdampfen.
